Easy Potato Soup

4 cups vegetable or chicken stock (2-16 ounce cans) 1 can diced new potatoes 1 cup shredded medium cheddar cheese 2 cups instant mashed potato flakes 1 cup whole milk or heavy whipping cream 1 onion, peeled and diced (optional) 1 cup smoked chopped bacon 1 tsp salt and 1/4 tsp white ground pepper For a thinner soup add an additional 1/2-1 cup chicken broth, stock, whole milk or cream

Pour broth or stock in a soup pot and over medium high heat. Add onion along with salt and ground white pepper to the pot. Bring mixture to a boil and then reduce heat and let simmer for 5 minutes. Stir in potato flakes then add in cheese and milk or cream and continue cooking stirring constantly. Serve immediately and top with, cheese, and green onions or chives. Crumbled bacon (optional)

Makes 4-6 servings.
